Easy Roasted Pork Recipe

Most roasted pork recipes found on websites are baked in oven which the meat always came out very dry and tough.  Also, not to mention about so much cleaning work to do for your oily oven and kitchen.  Here, I will show you recipe that can make a nutritious herbal soup and at the same time having crunchy roasted pork without any oily mess.
 
Rub a good size pork belly with salt and then leave in fridge overnight.  Next day, in a soup pot put water level right below pork skin, add in your favorite Chinese herbs with ginger and garlic. This is how it looks after boiled for 40mins. 
 
Easy Roasted Pork Recipe
Then put pork belly with skin face down in a frying pan and pan fry in medium heat for half an hour or until skin turns crispy. Remember to cover the frying pan to avoid oil splashing around your stove.  See the roasted pork looks so crispy on top and with tender meat below, just perfect!

Homemade herbed egg noodles

After reading all those tainted oil in news, I am getting scare of buying bread and noodles from stores.  I have been making homemade bread lately using recipes that I have posted earlier, bread came out all yummy soft and chewy just like squishy.  This time I'm going to make noodles but found out my noodle maker rusted after storing without using it for a long time. Too bad, I have to hand make noodles by flattened dough, roll it up and cut into fine slices. Then loosen it out by mixing with flour.  Wow, I can't believe the noodles taste so good and chewy. This is the recipe which I added my favorite herb dill.

Ingredients:
1)  2 eggs
2)  2 cups flour
3)  1 teaspoon salt
5)  2 tablespoon dill

I heard so much about  MyKuali Penang White Curry Noodle and decided to give it a try after seeing it displayed at Cold Storage in 1 Utama.  The noodle is small size which comes with a packet of creamer.  It doesn’t taste as great as I was expected, just okay.  Maybe I was expecting too much after hearing so much hype about it..

European style Chewy Blueberry Bread (Tested with picture)

European style soft Chewy Blueberry Bread


If you are craving for crunchy crust bread and soft chewy inside, this is the recipe for you.

Ingredients:

1) 1 1/3 cup warm water
2) 1 tablespoon sugar
3) 2 teaspoon dry yeast
4) 4 cup sifted flour
5) 1 teaspoon salt
6) 1 cup blueberries
7) 2 tablespoon oatmeal
8) 1 tablespoon butter
Set bread machine to Dough cycle. Stir ingredients 1-3 until sugar dissolved, and then pour into the bread machine along with ingredients 4-6. Start the machine and let it knead for about 15 mins into round dough.
Divide dough into 2 and roll oatmeal on top.  Put on greased baking pan and cover with plastic wrap until dough rise for about an hour.
Turn oven on to 220c. Bake for 15 mins or until crust turns light brown.
Enjoy!

Panna Cotta Recipe











I thought of making panna cotta rightafter seeing vanilla bean pods in my kitchen cabinet. This recipe is very easy to make, took me only 5 minutes.

Ingredients:
1) 250g cream
2) 2 cups fresh milk
3) 1 packet unflavored gelatin
4) ¼ cup sugar
5) 1 tsp vanilla extract
6) 1/2 tsp vanilla seeds
7) Fresh berries jam
 
Mix gelatin into milk and stir well. Boil cream in low heat and then add in milk and sugar. Stir until mixture comes to boiling and then turn off the heat. Add in vanilla extract and vanilla seeds. Pour into glasses and let it cool down. Refrigerate at least 2 hours, serve with fresh jam on top.  Enjoy!

Soft Chewy Breadsticks Recipe (Tested with picture)


 
 
I've been trying to bake soft and chewy bread but failed so many times and was wondering why.  Suddenly a thought came to my mind that maybe the yeast that I've been always using doesn't suit to bake soft bread. Today I used another brand of dry yeast which stated on packaging for baking bread and donuts. This time I finally got it right! The breadsticks came out wonderfully soft and chewy.
 
As usual, I used all natural organic ingredients and can be topped with chocolate, caramel syrup or honey, or just plain with brush of butter. This recipe is so easy to bake, must try!

Ingredients:
 
1) 1 cup warm water
2) 2 1/2 tsp dry yeast
3) 3 tbsp brown sugar
4) 1 tsp salt
5) 1/4 grapeseed oil
6) 3 cups organic bread flour
 
Stir ingredients 1 & 2, and then add all ingredients into bread machine. After dough is formed, rolled into a rectangular shape and cut into long strips, twist 2 strips together to form breadstick. Let it rise for about 30 mins. Turn on oven to 180c, bake for 10 mins. Brush with butter on top, add or dip in any toppings. Enjoy!

Yogurt Cheesecake Recipe (Tested with picture)










I use plain yogurt instead of heavy cream which normally used in cheesecake. I have cut down half on sugar with just a touch of sweetness. It came out light and creamy, very delicious.

Ingredients:
1) 250g digestive biscuits
2) 2oz butter
3) 14oz cream cheese
4) ¼ cup sugar
5) 2 eggs
6) 1 cup plain yogurt
7) grated lemon rind

Blend digestive biscuits until fine, mix with butter and then press the crumbs on to baking dish firmly. Cream the cream cheese into mixer, add sugar and then eggs one at a time. Pour yogurt and then lemon rind until mixed. Pour batter on top of the crumbs. Bake in preheated oven at 160c for about 40 minutes. Let it cooled before cutting it into squares.

Butter Cake Recipe (Tested with picture)










Recently I found out that flour contains bleaching agent and is very disturbing to know. Today I baked this pound cake using unbleached organic flour and it came out moist with fine texture as well. Usually I put butter and sugar together to cream with mixer but this time I creamed butter first for 2 minutes and then slowly add in sugar. It came out firm and without any bubbles. You may also add in fine grated orange zest before adding in eggs to give citrus taste in cake.

Ingredients:
1) 1 1/4 cup unbleached flour
2) 1 1/2 tsp baking powder
3) 1/2 tsp salt
4) 1/2 cup sugar
5) 6 oz butter in room temp.
6) 1 egg and 1 egg yolk
7) 12 tbsp fresh milk

Shift ingredients 1-3 in a mixing bowl. Cream butter in mixer for 2 minutes medium speed, slowly add in sugar and then eggs. Turn mixer to low speed and slowly add in flour mixture and alternate by adding milk until all mixed. Pour batter into greased tray. Bake in preheated oven at 190c for about 20 mins, lower to 170c for another 20 mins.

Lazi Vegetable Fish Ball Soup

Just harvested lazi veggie in my garden, which is very easy to grow from cut stems. I like to fry ikan bilis for making soup base, then add veggie and fish balls. Elderly always say this veggie is very good for eyes and high in fiber.

Herbed Thin Crust Pizza with Bacon and Olives










Refer to my pizza crust recipe, add few tablespoons of dill together with the ingredients. Dill has the healing properties that are good for our skin and digestion. Crispy bacon on top with fragrant herb taste, this pizza is just wonderful. Must try!

Blueberry Cinnamon Crumbs Muffins Recipe (Tested with picture)



Blueberry season is in, must bake with the best ingredient!

Yield: 12 muffins
Ingredients:
1) 3 cup self raising flour
2) 1/2 cup sugar
3) 1 tsp salt
4) 1/2 cup vegetable oil
5) 2/3  cup milk
6) 2 eggs
7) 1 tsp vanilla
8) 1 cup fresh blueberries

Crumbs ingredients:
1) 1/3 cup flour
2) ¼ cup sugar
3) 3tbsp milk powder
4) ¼ cup butter
5) 1.5 tsp cinnamon powder

Shift ingredients 1-3 in a mixing bowl. Stir ingredients 4-8 and then add to the mixing bowl to combine. Pour batter into greased muffin tray, fill to the top. Press mixed crumbs ingredients to the top of the batter. Bake in preheated oven at 190c for about 20 mins.
Moist inside and crispy on top, delicious!

Cornmeal Squares with Cream Cheese Frosting Recipe (Tested with picture)










Ingredients:
1) 1 cup organic cornmeal
2) 1 cup all purpose flour
3) 1/3 cup sugar
4) 1 tsp baking powder
5) 1/2 teaspoon salt
6) 1 egg beaten
7) 1/4 cup canola oil
8) 1 cup milk

Cream cheese frosting:
1) 4oz cream cheese
2) 1/4 cup butter
3) 1/4 cup icing sugar

Mix ingredients 1-5 in a mixing bowl. Add ingredients 6-8 and stir gently to combine. Pour batter into greased square baking pan. Bake in preheated oven at 200c for about 15 mins.
Mix cream cheese frosting ingredients with fork, layer on top of cooled cake. Cut into squares to serve.

Apple Crumble Pie Recipe (Tested with picture)



This recipe takes only 10 minutes preparation time, a perfect dessert if you are in a rush. Turmeric powder has powerful healing benefits and can give the natural yellow color for the pie.

Ingredients:
1) 3 apples cut in cubes
2) 1 tablespoon cinnamon powder
3) 1 tablespoon sugar
4) 2 cups flour
5) 5 tablespoon milk powder
6) ½ cup of cold chopped butter
7) Few tablespoons of sugar
8) 1 teaspoon turmeric powder

Turn oven to 200c. Mix apple ingredients 1-3 in a mixing bowl. Mix flour ingredients 4-6 in another mixing bowl and then layer half on to a baking dish. Pour apple ingredients, and then press all flour ingredients on top. Bake for about 20 minutes.

Recipe of Cinnamon Crumbs Pie

If you have extra dough from focaccia or pizza that I have previously posted on how to make, you can use that extra dough to make into cinnamon crumbs pie as a dessert. Depending on the size of that extra dough, make adjustment to the ingredients accordingly.

Ingredients:
1) 1 tablespoon cinnamon powder
2) few tablespoons of sugar
3) few tablespoons of flour
4) few small cubes of butter

Turn oven to 240c. Mix ingredients together well until it has a sandy look. Lightly pat mixture on to the dough. Bake for 15 mins or until crust turns light brown. It is a great dessert for Xmas party. Enjoy!

Herbed olive cheese focaccia

Are you craving for Italian bread? This recipe is easy to make if you have a bread machine.

Ingredients:
1) 1½ cup warm water
2) 1 tablespoon sugar
3) 2 teaspoon dry yeast
4) 4 ½ cup sifted flour
5) 1 teaspoon salt
6) assorted dried Italian herbs, rosemary, parsley, dill..
7) olive oil
8) shredded cheese
9) sliced black olives

Set bread machine to Dough cycle. Stir ingredients 1-3 until sugar dissolved, and then pour into the bread machine along with ingredients 4-6. Start the machine and let it knead for about 15mins into round dough.
While the machine is kneading, prepare 3 large baking pans greased with olive oil.
Divide dough into 3 and roll each dough flat to put on greased baking pan. Cover the baking pans and let dough rise for about 2 hours.
Turn oven on to 240c. Add shredded cheese and then sliced black olives on top. Bake for 13 mins or until crust turns light brown.
You may keep extra dough in fridge for up to 2 days. Enjoy!

YogurBerry is very popular in Korea and has franchise branches in other countries. Branches in u.s are also popular with self serving on non-fat yogurt and fruits. However, people are amazed of why this popular frozen yogurt ice cream isn’t popular at all when opening branches in Malaysia. The worst is that you can hardly see any customers. I suppose this also reflects on how Malaysians are being not so health conscious and they still prefer rich and creamy taste..

Finally got the time to drive to Times Square and try out the first Krispy Kreme donuts in Malaysia. It is located on ground floor next to Papa John’s pizza. Initially I was quite disappointed seeing donuts in irregular shapes, didn’t really look that tempting. Though, it is soft and chewy, different than Big Apple Donuts.

San Terri Cottage bakery in Bandar Menjalara, Kepong



All the cakes at San Terri Cottage bakery are in square shape and with limited choices. This is the only bakery store that I know of selling chestnut cake. Chestnut cream isn't that much on the cake, just thinly spread on top and in between. The sponge cake is very dense and moist. 1 kg rm80, cost more than Secret Recipe but worth to try out if haven't.

Tony Roma's Restaurant at Pavillion KL



Tony Roma's is located on level 1 at Pavilion, across from the Food Republic. It serves steaks, bbq ribs and other western dishes. Ribeye steak was fresh and tender so as lamb chops. Beef ribs was a bit tough and dry. Baked potato was good. Service is good and kid’s friendly. I will for sure go back for more steaks..

Due to recent scare of Melamine poisoning in food, the best way to avoid is to make your own home cooked organic food. Here is a cornmeal muffins recipe which is easy to make in less than 10 mins.

Ingredients:
1) 1 cup organic cornmeal
2) 1 cup all purpose flour
3) 1/3 cup sugar
4) 1 tsp baking powder
5) 1/2 teaspoon salt
6) 1 egg beaten
7) 1/4 cup canola oil
8) 1 cup milk

Mix ingredients 1-5 in a mixing bowl. Add ingredients 6-8 and stir gently to combine. Pour batter into greased muffin pan. Bake in preheated oven at 200c for about 15 mins.

Recipe of Sesame Coconut Cookies (Tested with picture)

Sesame Coconut Cookies

Cookies came out crunchy and tasty, kids would like it a lot. Recipe is low in sugar.

Ingredients:
1) 1/4 cup butter
2) 1/4 cup sunflower cooking oil
3) 1/2 cup sugar
4) 1 tsp vanilla
5) 2 egg white
6) 400ml flour
7) 1 tsp baking powder
8) 2 egg yolk beaten
9) sesame seeds

Whip ingredients 1-5 in a mixing bowl until light and fluffy. Shift ingredients 6-7 into the mixing bowl and mix well together to form cookie dough. Add little flour if dough sticks to fingers. Use cookie cutter to cut into desired shapes. Brush with beaten egg yolk & sprinkle with sesame seeds on top. Bake in preheated oven at 175c for about 15 mins.

Recipe of Nyonya Steamed Chocolate Cake (Tested with picture)

Nyonya Steamed Chocolate Cake

The chocolate cake turned out to be very moist & dense, rich and tasty. Must try!

Ingredients:
1) 3/4 cup corn oil
2) 1/2 cup sugar
3) 1/2 can evaporated milk
4) 2 eggs (lightly beaten with folk)
5) 1/2 tsp vanilla
6) 1 cup flour
7) 1/2 cup coca powder
8) 1/2 tsp baking powder
9) 1/2 tsp baking soda

Heat ingredients 1-3 in saucepan over low heat, stir until sugar dissolved.
While cooling down ingredients in saucepan, shift dry ingredients 6-9 into a mixing bowl.
Add eggs and vanilla into the cooled ingredients. Pour into dry ingredients and mix well.
Steam in greased square pan over medium heat for about 45 mins.

Recipe of Moist Carrot Cake (Tested with picture)

Moist Carrot Cake


The carrot cake comes out moist and delicious. Recipe is easy to make, must try!

Dry Ingredients:
1 1/2 c. unsifted all-purpose flour
1 c. packed brown sugar
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon

3 eggs
3/4 c. vegetable oil
1 1/2 tsp. vanilla

2 c. grated raw carrots
1/2 c. walnuts (if desired)

Combine dry ingredients in large bowl. Beat eggs, oil and vanilla in small bowl. Add to dry ingredients and blend. Stir in carrots and walnuts (if desired). Pour into greased and floured square pan. Bake at 175F for 35-40 minutes or until toothpick inserted in middle comes out clean.

Bubba Gump at The Curve


Bubba Gump serves American style seafood. I like their drink Lotsa Lava, a mixed of coconut cream with strawberry, very rich and creamy. Food there is too stuffy and oily for me but for sure kids like it there by having fun flipping over the ‘Stop Forest Stop’ sign and get to hear very funny birthday songs sing by staff. Service is very good and kid’s friendly.

How to peel grape skin off easily?

Rinse grapes and then rub grapes with salt and flour. Rinse flour completely off the grapes and that the skin of grapes can come off easily when peeling. This method can also help to get rid of the chemical toxins from pesticides.

Pastasia restaurant

Pastasia serves fusion of Italian and Thai food, mainly serving pasta dishes. My favorite is chicken ham with mushroom white sauce linguine, tasty and rich. Other than that, pasta and lasagna are just so so, home cooked style. I like the environment, pleasant and not crowded. Service is good. It’s a good place to chat with friends or dine for lunch.

Pickled Radish recipe



This is one of my favorite Korean side dishes. It is healthy, crunchy and easy to make. It can also help to clear blemishes on skin. Though remember not to consume together with any ginseng products, would turn hair gray.

Recipe:
Thinly slice white radish and then put it into a glass container filled with apple vinegar and few tablespoons of sugar. Soak in the container and refrigerate for few hours before serving.

Chili Oil Anchovies recipe

After reading all sort of news on food with MSG and cancer causing preservatives and colorants, I decided to try making chili oil with anchovies at home instead of buying from supermarket. It’s actually very easy to make and turns out delicious. However, it requires using a lot of oil to soak in the bottle, a bit fattening for health conscious individuals.

Here is the recipe.
- Fry anchovies in hot oil until crispy, then set aside to let it cool down.
- Fry finely chopped onions/garlic/dried chili in hot oil, add salt and stir until onions turn brown.
- After all the ingredients cool down including cooked oil, mix together in a small glass container. Let the ingredients soak well for a day before serving.

Harry's B1 Korean Restaurant at Auto City is a new branch of Bee Won Korean Restaurant at Sheraton Hotel. Both restaurants serve authentic Korean food as well as barbeque dishes. Food is delicious and has variety of choices. Waitress cooked and served barbeque meat at our table, really good service.

Shanghai Ding Tai Feng Restaurant at Queensbay Penang



上海鼎泰豐 is at the Bayan Bay corner shop lot near Queensbay mall. They serve Shanghai style dumpling, pau, dim sum, handmade noodles...
小籠包 used to be really good there when it was first opened back around Sept last year, but now the quality has really gone down alot and without much crowds around. It is really disappointing especially I like xiao long bao very much. Hopefully they are able to hire a good chef so that I can enjoy my favorite xiao long bao there again...

Even eggs can be fake?!

Read a report on investigating a school in Guangzhou which specialized in teaching entrepreneurs to make fake food so as to make big profits by selling them. Fake food is made from chemicals and preservatives which is really bad for health. Even eggs can be made fake by adding different types of chemicals in moldings to make them look real. There is also not much difference from real eggs after cooking them, just a little bit more air bubbles on the egg white and doesn’t have any taste of egg. Long term consumption can damage liver and brain. Beware..

Moist Chocolate Cake recipe (Tested with picture)

Moist Chocolate Cake

Try this super moist chocolate pound cake recipe, very easy to make & delicious. Cut down on fat and sugar recipe.

Ingredients:

1/2 cup Sugar
1/4 cup Butter (softened)
2 Eggs
3 tbsp Mayonnaise
2 cup Milk

2 cup Flour
1 cup cocoa powder or Milo powder
1 tsp Baking soda

Blend sugar & butter in mixer until fluffy, then add eggs one at a time. Put Mayonnaise into mixture.
Pour shifted dry ingredients and milk into the mixer and blend in low speed for a minute.
Pour mixture into greased pan.
Bake in oven at 350C for 35 mins.

Shanghaiese Xiao Long Bao recipe (Tested with picture)



Well, after lining up outside the restaurant to view chefs there making Shanghai steamed dumplings for such a long time, I must get my hands on to try making them. Hey, actually not really that difficult.
First, marinate grounded pork meat with salt, corn starch, sesame oil, soy sauce, ginger, green onion bulbs, sugar, wine…
For dough, put 2 cups of flour into bread machine and mix with icy-cold water and some vegetable oil. Then hit the dough on table few times really hard, this is to make it more elastic. Cut dough into very small pieces. Roll it into very thin round shape and then wrap with pork meat.
Boil water first and then steam them for 10 minutes. Enjoy!

Dragon-i Restaurant at Queensbay Mall Penang

Dragon-i Restaurant recently opened its first branch in Penang Queensbay Mall which we went to try on Father’s Day. When we got there around 1:20pm, there were still unusually many people lining up outside the restaurant. We had to wait for over 1.5 hrs to be seated, first time in my life to do so! Well, those shanghai dumplings made by chefs from open kitchen looked really tempted for us to wait.
Surprisingly, food came really fast after ordered and was presentable. Xiao long bao, Shanghaiese pork chop noodles, braised pork belly… were really delicious. Service is good. It’s really worth the wait afterall.
